Nice build! Play many games that utilize SLI? I've had a few SLI and crossfire set-ups recently. I kinda went back to a single card set-up due to the issues I was having... Can't wait for them to come up with a solution that doesn't require the developers to put in extra work to make it compatible with multi-card rigs.
Yeah, Port Royal is pretty hard on a RTX 2080Ti, that's the best benchmark to really see what those RTX 2080Ti's can do. It does cost a little bit to run that one though... If you have 3DMark Advanced it's like a 3 dollar upgrade. Otherwise, Time Spy is their latest free benchmark that most use.Other free benchmarks:
The demo of Shadow of the Tomb Raider has a benchmark in the setting page. You can download it on Steam.

Most of the deals we want are actually going to be on Cyber Monday. Some sites have decent stuff on Black Friday, but the ones following that week are just as good.
I would suggest picking a brand you want to go with and go from there... If your going with Sundown, I'd suggest just getting a Sundown SCV-2000 when it's on sale. Otherwise, I'd keep a lookout for an Ampere Audio 2K, DC Audio 2K, or a Twisted Sounds 1.8K. As for subs, I'd also check into the Fi X series.

What is your full set up specs. How many amps have you tested with the DD1?

You've all ready invested into your electrical, I would definitely stick to the higher power set-up.
I would also suggest checking out the Twisted Sounds 2.8K amplifier. It's basically a 3500w board for $600.
They did a dyno on it, and it scored very well:

If you have a batteries plus near you, I'd highly suggest checking them out. They have X2Power batteries, which are re-branded Northstar. If you can't get one of those, then i'd be looking into the XS power batteries next.

Since you are running in the 600w range, I would actually suggest picking up a E12D4 v3 instead for a final impedance of 2 OHM's and pick up an amplifier like the Alpine MRV-M500. It's easier on your electrical due to better efficiency and they are pretty cheap. Amp dyno's have shown the MRV-M500 is under rated.

What's your budget on an amplifier?
If you have passive crossovers, you would just need one 4 channel amplifier. If not, you will need two 4 channel amplifiers.

The Pioneer AVH-4200NEX or 4100NEX is going to be about the cheapest route for what you want and actually get what you want. You get what you pay for... That Jensen headunit would of made a lot more news than it has if it was actually as good of a deal as that... It's been out for a long while and not many have praised it.

I would definitely install a nice camera system in my shop at that point... I wonder what the background is on what is going on with someone else at the moment though. If I had some expensive equipment, like those rockford 2500's you got, i'd consider looking into GPS tags installed in the amps since they are worth the security.

You have a lot more research ahead of you if you want to run multiple alternators. Since you have shown interest in mechman alternators, i'd recommend directing your questions here:

Doing a search on the forums shows that more than a few members have had similar questions on how to wire up multiple alternators. Just as mentioned before, you need to watch your amp draw, rather than watts. Knuconceptz shows their 1/0 gauge OFC wire is good for 375A draw and their CCA 1/0 gauge is good for 250A draw... Rockford Fosgate shows their 2500-1bd can draw up to 300A @ 13.8V. So you will need at least one run of 1/0 gauge OFC wire to support one 2500-1bd from them. They also recommend at least a 200A alternator for just the one amplifier. With multiple alternators, you are going to be running multiple runs of 1/0 gauge wire to keep up with the amp draw.
