Setting gains with a DMM is better than nothing but it's not quite as good as a DD1 or O scope. If you're only using a DMM then you'll need to guess your head units maximum volume without clipping. Then you'd need a test tone in the 0db -5 or -10 range depending on your preference. Then you'd use the ohms law to find your amps target voltage output. It's not a perfect setup but it's better than just turning to half way and hoping for the best.

With a DD1 you'd just play the tones, adjust gain till light says stop and be done, or then get out your DMM and dial gain down to your desired power output.

Google search setting amp gains with DMM and you'll find many tutorials. The first time I tried it yielded decent results. After I got a DD1 I found that using a DMM method was not reaching full potential of my amps.
