Honestly I don't how those meters work, but adding all this stuff would help the amplifiers and would give you almost no voltage drop at all giving you the full output all the time and it would be less strain on your electrical system. Give me a sec and I'll try to figure out you VU issue...

Get a DMM and test at your amp to see if the cap is helping or not, play it for a while with it off and then put it on and see. A good cap can help.

Next how is it grounded right now? Also how is your head unit tuned?

Yes it is. I'm running a double din pioneer touchscreen. And the amps are grounded to a ground bolt drilled into the floor of the trunk with about a foot of ground wire. Paint has been grinded away so its a clean metal to metal contact

Should ground it to the frame. How close are the amps grounded?
