That's what i do.. crown molding, in the living room all our home theater wiring is ran behind the crown molding, cant see any of it both work well. Why would you have a new house and not have it prewired for sound? x2, i thought most new houses came prewired with coax/audio/rj11/rj45 bundles. They have all kinds, for different applications, depending on what/how ur going to use it. I'm sure you can buy it other places too, I just know LOWE'S has it! I have used it before, worked good for me, just doesn't stay on for a long time. ( peel and stick, you can paint it too! ) IDK, you might have found/done something else already, but it's an idea.
