Dude get a mini fridge for this. You want portability buy the ones made for kegs on wheels. Leave a converter in the truck for the motor to keep it cold. With the dry ice and shit ur gonna be way over price for what its worth.

For the inside you could probably use some of the White FRP paneling thats carried by Home Depot. Its the kind of paneling you'd see in a bathroom, Its not smooth, has a texture to it. Use the Liquid Nail FRP to put it up or I believe you use plastic rivots so there are no screws and then caulk the edges.
