Is there a big difference in quality between 10 inch subs and 12 inch subs. for example a 10 vs 12 inch type r

Generally no. Depending on the designs, you could potentially change the resonant frequency of the enclosure, but in most cases it's a negligible amount.

With a bigger sub, you gain more cone area and hence have more air movement, but you should pick the subs based on the application and acoustics of the enclosure/car.
