This is my understanding of the correct wiring for my stereo.

Ideas? Input?

yes thats 100% correct except for one small detail. when bridging a 4 channel to a dvc woofer, the channels are separated by Left and Right. so if the bass by chance isnt completely 50/50, the voice coils will "fight" each other and it will end up making the woofer sound muddy. if you switch to a monoblock or a 2 channel (which will work in your case), then the results will be much better. in my honest opinion, i would save that amp and use it for your door speakers

What if I were to just use one of the left or one of the right? Do you think that will still have enough power to kinda "punch"?

If you are bridging channel 1 (L) + channel 2 ®, bridging 3 (L) and 4 ®, you should be fine. I would think so at least
