When you use these apps you are supposed to plug in a special tool to the mic jack of the phone that's basically some oscope prongs wired through some resistors. Some of them even offer bluetooth versions to get around the noise in the mic input. People have been doing this for years with pc sound cards. Its the exact same thing actually. When set up properly they are generally accurate enough for audio needs but not much else without expensive hardware. There is a TON of information out there on this stuff. I have been toying with the idea of a bluetooth probe in the back permanently hooked to the amplifiers and then mounting an old phone in the dash for constant oscope monitoring.
