You should fuse them if they are far enough away from each other, but if they are right up against one another there is no need since the likeliness of the wires from each terminal to be damaged there is very low. But if you're anal about that sort of thing then yea u can fuse between each batt. And yes 300a fuse for 1/0 gauge wire, bigger fuse if you are running bigger wire.
