Undo my ground wire on my amp without un hooking the battery first? It sounds like it could be but I don't wanna go trough the trouble if I don't half to.

It doesn't matter. Removing the remote wire will do nothing unless the car is on.

And if the car is on dont try and take the ground off, the amp will try and ground through the RCA's and potentially fry some things in your HU.

Why not just take the positive off the battery?

First off when you disconnect a battery you only need to disconnect the neg terminal (the ground) and second off when you do that it clears some codes in the computer and loses radio stations and eq settings which is annoying
