Looking for a 2500 watt amp!

Speaking from experience I'd get either a: T2500BDCP OR SAZ2500D both amps do in excess of 3k have very good reps, tried and tested if you will...

This was a huge factor for me when buying. I only needed 1.6-2k RMS at the time (XXX) but I just backed the gain off a touch. I'm glad I did now, although I didn't scope any upgrade at the time, a few months later I decided to get another Sundown to run a RE MT (work van) - upto 6k on tap.

Always plan further down the road.

with the two dc audio level 3 10's my goal is to push 1,000-1,200 rms per sub depending on whichever amp i finally decide on and buy... and quite honestly, i don't think i will ever mess with the system once it's installed into my truck. I only want to do this once and never have to touch it again. Which is why i'm now inquiring about the AQ2200 because it's more powerful than a DC 2.0K and cheaper which is awesome

any holes in my thinking process of this?

Just to add, is there any reason for 2x 10's? You might yield better results with 1x 12" if space is not a factor...

i've heard from multiple people that 12's just will not clear under the rear seats of a quad cab ram without raising the seat to the point of beyond uncomfortable riding in the back so 10's are my best bet for the most rms i can get out of a system completely hidden and doesn't take up extra cab space

10s take up more space than 12s yes. So in your case stick to 10s.
