We got some pretty good alternator options for the Jeeps. With that much power, I would put in a 320 and a hand throttle so you can throttle the motor up for Demos. I'm curious what you're using to control the ipad volume...I have debated on doing something similar like you have with your ipad dash, but I like my vents too much, and ive never been able to locate a decent spot to put a headunit that I wouldn't have to do some major modifications to make it work.
