Ok what would be the difference between running 2 subs at 600 rms or one sub at 1200 rms...

If you were using the same brand of subs...

Would the one getting 1200 rms have more output??

IF the subs are the exact same model and the boxes are equally efficient...

Then in a perfect world it would be exactly the same. But in the real world the two with half power would probably be louder. Less power compression.

Lol what? What was wrong about my answer?

And yes, power compression. When you start to get really high up (power wise) it gets harder to get louder...ever wondered why? The sub heats up, becomes less efficient. Otherwise you would gain 3db every time you doubled power.
