I know what you mean, I film all my youtube videos with my phone and certain lighting conditions can make a world of a difference as to how it performs, I use an android and just now figured out how to make it film flex better. Try holding your phone with both hands, and aiming steady at the area you want to pick up the flex for an extended period of time, I mean stand there for a minute, My theory on why they have a hard time is because when I film with one hand its always a little shaky, and that would cause the focus to go in an out already, let alone trying to focus on something waving back and forth really fast, phones can have a great picture, but are still not as good as a real HD camcorder, so they seem to take a while to focus properly.
