So did you only have 8 gauge wire on the MB Quart 1500? And if your running more than 1k then it is usually a good a idea to upgrade your front battery or install a second battery.

There was a build log somewhere of this not to long ago. It was actually built by a guy on the forum. I think it was her boyfriend but not 100% sure. Heres a video of the car from his channel:

7 cubics is enough for a 18" subwoofer. It's just after all the displacements the sub will probaly only have about 5 cubes which is the bare minimum but it will still work. So I would deff do the 18.

Also, have you checked to make sure RCA's arent crossing your power wiere anywhere?
