I'm wondering what is the best way to hold down a 75lb sub. I read that t nuts were good and hurricane nuts were good also. What do you guys think?

Either will hold down a sub. A better question is "Which one will hold up a sub better?" And the answer is the one with the most surface contact area. Hurricane nuts.

From pictures I've seen of hurricane nuts it looks like there is not much meat to hold them from stripping out. I believe the whole idea is to tighten these down as tight as you can right? How well do these hurricane nuts bite so they don't strip out?

You put the hurricane nut in from the back, then screw your bolt in through the front.

Yeah I know thats the same with a t nut I'm just wondering which is better?

1/4 t-nuts and you'll be more then fine. Put a small dab of lock tight on them also.
