If you are running OFC you can get away with one run, this wire can support 375 amps at 20ft.

So that means I'll need 2 fuses (one next to each battery), and the size of the fuse should be like.... what, 180A? Or like 200? I'm not sure if I choose it based on how many amps are needed for the system or just how many amps are being sent to the battery to charge it and stuff.

That would be crazy lol! I'm only running the CCA wire rated for 250 amps on a 1800 watt system with HO alternator and never had any issues so one run of the OFC will work for 2000 watts.
