Should I use both amps?

I have 2 DD 9512's 4ohm dvc. As well as 2 Mmats m3000.1. From what i read the MMATS amp is 3000w rms @ 1 ohm. and 1700w rms @ 2 ohm. The amps from what i see, are not bridgeable (only 1 rca input on both).  Are my only options to wire the subs together and only use one amp @ 1 ohm. Or to wire each sub to its own amp @ 2 ohm and gain match them. 

Are these my only options besides getting a different amp?

You can do either.

Personally, i would use both and run them at 2 ohms each.

I thought about buying another Skar RP 2000.1 so I could run 2 of those on 2 Skar DDX 12s at 1 ohm a piece but not sure tho any intake on this?

Ya,.. bridging a mono (one) amp, is hard to do,....

sarcasm? If not could you please explain how i'd do that. Because from what i've all read is you can't bridge them if they're not made to do so.

Yes it's sarcasm. What you are talking about is strapping 2 amps together. You can't bridge a monoblock.
