BigYellowBlur78 Posted January 21, 2016 Report Posted January 21, 2016 My job is having a pot luck at work tomorrow, I am going to make cheese stuffed tator tots wrapped with bacon. The pot luck isn't until 12, so I'm afraid the cheese inside the tator tots will get hard and they won't taste good. How can make them so the cheese stays gooey inside? Or how should I bring them into work? Or would it be better to just do the tator tots wrapped with bacon, and have melted cheese on the side so people can just dip them in it?

bcpballer64 Posted January 21, 2016 Report Posted January 21, 2016 This is three ingredients that can get goofy easy, bacon can get chewy, tots can get that funny texture taters get, and cheese is hard to maintain, what facilities do you have by way of re heating or what not? Doing a cheese dip with them might be a good option. What cheese were you planning on stuffing with? Mozzarella shouldnt get hard. The issue with something like that is going to be maintain your crispy factor on the bacon and tot. bcpballer64 Posted January 21, 2016 Report Posted January 21, 2016 If your not really worried about them staying super duper crispy then I think a crockpot would be fine to keep them warm, are you committed to the tot bombs? If you go the crock route you just want to avoid condensation because that's what will get you soggy. As far as the cheese goes just make sure it's decent cheese and you shouldn't have an issue. I don't know how fancy you want to be but Lit'l smokies in KC Masteriece/Sweet Baby Rays is always a crowd pleaser and is simple to make. Simply put the smokies and BBQ sauce in the crockpot and they come out looking like this. This is what the package looks like. 79 cutty Posted January 21, 2016 Report Posted January 21, 2016 I cater a lot of events and weddings, honestly ehat you are trying to accomplish is a recipe for failure. Tator tots don't stay crispy long and the added complexity of cheese in them unless you are frying on the spot, or baking them and going right to service just isn't going to hold for any length of time. Even in a crock pot they will steam and get soggy unfortunately man. Firm believer in letting my cars do my talking! You can't rush quality, it doesn't happen overnight. aculous Posted January 21, 2016 Report Posted January 21, 2016 pork in a crockpot is always good, I used a barbacoa recipe awhile back that was basically crockpot pork that you sear/brown first. Main ingredients is a puree of garlic and chipotle peppers in adobo. Super easy prep and you end up leaving it in the crockpot for about 8-10hrs on low. serve it on tacos or some vessel of goodness. chop up white or red onion/tomatoe/serranos and call it good. Also you could do bacon wrapped dates stuffed with goat cheese. Those are pretty easy to do and are fucking fantastic. What you can do is under cook them ever so slightly so the bacon isn't super cripsy the night before and then get a little hot plate and essentially just heat them up when you get to work. You could probably do it in a crockpot too come to think of it...just wouldn't be as good.
