Is there a way to seal off a wall without expanding foam? Like build a tight fitting beauty baffle with foam on the edges or something?

put tape down so the expanding foam will come off when you are done

This is what I am planning to do, but doing a sealed off trunk instead.

Well, i don't think theres an exact way to seal it off, if you're just doing panels. You could always just tape bags to where you want sealed off, then spray foam it. That way the spray foam isn't stuck to anything, and easily removable when needed.
