Jay L. Posted April 23, 2013 Author Report Share Posted April 23, 2013 Here are some pics of my 1st comp. entries...there is a 30 min. window to turn in each entry. If your 1 sec. late, they won't take it. It can get pretty stressful getting everything prepared after being up pretty much all night cooking. There are alot of technical little rules about how stuff is presented, whats in the box, etc. The parsley bed in these boxes take about 1hr. a piece to put together. It's done in such a way that when the judges get their samples, parsley won't come out with the meat. Its packed in there really tight. They're taught in their class to not shake anything off the entry when they pull it out... Chicken... Ribs... Pork... No time to take pics of brisket...was hectic as hell. These entries put us at 130 something place out of 500 teams at the American Royal BBQ. Not bad being our first comp. with the best in the world.
